Details

During the forging process a layer of carbon is formed on the face of the raw blade which is, in the case of this knife, left in place and only removed below the mid-grind point. This adds a lovely rustic look to the knife while further protecting it from corrosion. It is still a carbon steel and will require careful drying between uses.

Wash and dry the blade immediately after use. Knives with carbon steel core are very prone to rust.

Gihei

Established in 1928, Gihei Hamono is one of the original small blacksmith shops working in Niigata, Japan. Gihei Hamano has extensive experience in traditional techniques, but have also through time, incorporated and explored more modern techniques such as the heat treatment their utilize today.
Their knives are made in small batches to ensure tight control on quality. These special pieces are renowned for lasting an incredibly long time under good care.
